Here’s a simple recipe for a stew that will be a backup for those days when you can’t prepare a meal and the freezer is looking real good.

You’ll need:

3 lbs Beef.pork and lamb stew meat cut into managable pieces (Use one meat or all three)

1/2 C Sliced carrots

1 C Pearl onions

1/2 C Green peas

6 Med Potatoes quartered

1T thyme

1/2T oregano

4 Cloves minced garlic

12oz Guiness (or any beer that you’ve got)

1C Red wine

1Pint Beef Broth (or vegetable broth)

1T Tomato paste

Flour

1) Dredge meat in flour. Brown in non-stick skillet. Add to crock pot or heavy dutch oven.

2) Brown tomato paste, add red wine.

3) Add remaining ingredients. Bring to low boil and reduce to simmer. Cook in crock pot 4hrs on high, 7hrs on low. Cook til meat is tender.
